Zucchini Bread Recipe

Makes 2 Loaves
Ingredients:
3 eggs
2 cups granulated sugar
1 cup vegetable oil
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cloves
2 cups shredded unpeeled zucchini squash
1 cup chopped nuts of your choice
1 teaspoon pure vanilla extract
2 cups granulated sugar

1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cloves
2 cups shredded unpeeled zucchini squash
1 cup chopped nuts of your choice
1 teaspoon pure vanilla extract
Preparation:
In a large bowl, cream eggs, sugar, and vegetable oil until light and fluffy. Mix in flour, salt, cinnamon, baking powder, and baking soda. Add cloves, zucchini, nuts, and vanilla extract; stir until well blended.
Pour batter into prepared loaf pans and bake 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
