Pork Kabobs
Pork Kabobs!!
Grill or broil these tasty pork kabobs. Ingredients include marinated pork cubes, mushrooms, onions, hot cooked rice, and bell peppers.
Cook Time: 30 minutes

Ingredients:
- 1 can (14 ounces) beef broth
- 2 tablespoons cornstarch
- 2 tablespoons soy sauce
- 1 tablespoon light brown sugar, packed
- 2 cloves garlic, finely minced
- 1/2 teaspoon ground ginger
- 1 1/2 pounds pork loin, lean, cut into 1-inch cubes
- 1 large red onion, cut into wedges
- 1 large bell pepper, cut into squares
- tomato wedges
- hot cooked rice
Preparation:
In a saucepan, combine broth, cornstarch, soy sauce, brown sugar, garlic, and ginger. Bring to a boil, stirring constantly. Reduce heat and continue to cook, stirring, until thickened. Arrange pork cubes on skewers, alternating with mushrooms, peppers, and onion wedges. Grill or broil for 20 to 30 minutes, or until done, turning and brushing with the sauce mixture frequently. Serve with tomato wedges and hot cooked rice.

I found this on the internet. I just used BBQ sauce instead of the sauce mixture in the recipe, and it was delicious. Good luck!

Zucchini Recipes
Fried Zucchini
2 cups fresh Zucchini, sliced
1/2 cup onions, diced
2 Tablespoons Butter
Heat up butter in medium sized frying pan. Put in the zucchini and onion, and cook until tender.
This is so easy! It only takes about five minutes.

Ruubarb Pie
Rhubarb Pie
9" pie crust for a double crust pie
4 c. chopped rhubarb1
1/2 c. sugar
1/4 c. flour
1-2 t. cinnamon
2 T. butter
Put the rhubarb in the bottom crust. Mix the sugar, flour and cinnamon together and sprinkle over rhubarb. Cut the butter into 4-6 bits and put in pie. Cover with top crust, seal, and cut vent holes. Then bake at 450 degrees F, then turn it down 350 degrees F for 40 minutes.We have tons of rhubarb this year so i am sharing this Recipe to all those out there that have a rhubarb patch in the back yard!

Zucchini Bread Recipe

Makes 2 Loaves
Ingredients:
3 eggs
2 cups granulated sugar
1 cup vegetable oil
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cloves
2 cups shredded unpeeled zucchini squash
1 cup chopped nuts of your choice
1 teaspoon pure vanilla extract

1 teaspoon baking powder
1 teaspoon baking soda

Preparation:
In a large bowl, cream eggs, sugar, and vegetable oil until light and fluffy. Mix in flour, salt, cinnamon, baking powder, and baking soda. Add cloves, zucchini, nuts, and vanilla extract; stir until well blended.
Pour batter into prepared loaf pans and bake 55 to 60 minutes or until a toothpick inserted in the center comes out clean.

Applesauce
Our trees are loaded with apples, so we have been canning apples this year. Here is the recipe we used:
3 pounds apples per quart

Sugar
Wash apples; core and quarter apples. Cook apples until soft in a large covered sauce pan with just enough water to keep from sticking. Puree using an apple saucer. Add sugar to taste if desired. Pack into hot jars leaving one-half inch head space. Process 30 min. for 3,000 to 6,000 foot elevation.
